Dear Blender, I Love You


My mid-year resolution should include blending daily for no other reason than I love it (my blender that is).  It's the one tool in my kitchen that never fails at producing miracles.  And it's the only tool in my kitchen that guarantees vitamin packed-ness with the touch of a button.

I've been randomly craving cream of asparagus soup for too long to have not already posted something.  Perhaps it has something to do with creamy soups and 100 degree weather not jiving.  But more likely, it has to do with forgetting my sporadic craving each and every time I pass through the market's automated entrance.

You'll need:
1 lb Fresh Asparagus, Chopped
3 Leeks, Sliced
2 Garlic Cloves
1 - 16 oz Can of Vegetable Broth
1/2 Cup Plain Greek Yogurt
1 Tbsp Parmesan, Shaved

Boil asparagus, leeks, and garlic until tender (about 15 minutes).   Blend vegetables until 100% smooth.  Add vegetable broth and yogurt and blend again.  Add salt and pepper to taste.

Healthy Pants Pizza

Some days you crave fatty pants pizza, some days you settle for lazy pants pizza, and the other days?  Well the other days you just need healthy pants pizza.

A few weeks ago during one of my all too frequent grocery store trips, I stumbled upon a sample stand.  And if you've been with me to the market, you know that by stumble upon, I mean ran to.  Rarely do I 'stumble upon' a sample stand and think "I'm happy I just ate that".  In fact, before that day, it had never happened - a scrunched face and search for the nearest paper towel is more like it.

To create your own healthy pants pizza, you'll need:
- 1 Eggplant
- Pizza Sauce
- Mozzarella Cheese, shredded
- Typical Toppings (I chose spinach, mushrooms, and onions)

Thinly slice eggplant.  Cover a baking sheet with aluminum foil and place eggplant disks.  Broil eggplant on each side for about 4 minutes or until browned.  Watch closely as they burn easily, especially the ones in the back!  Cover with sauce, cheese, and toppings, and broil another minute or two until the cheese is bubbly.

Spaghetti? Sort Of...



A few weeks ago, a friend suggested a spaghetti squash recipe she made post kicking butt at the Boston Marathon.  I raided her leftovers and knew I'd give it a shot.

After a weekend of birthday/mother's day glutton, I was craving something veggieful.  And subbing a meal's primary starch with a veggie?  Well, that sounded right about where I wanted to be.  I scribbled down the ingredients and B-lined it to the market on my way home from the office.  

My excitement for the recipe grew as I realized my basket was only lacking two ingredients and I hadn't yet left the produce department.  And feta and kalamatas?  I barely had to brush the processed aisles to scoop those up!

This dish was a delightful main course, but could also be served along side a lean meat for a more "complete" meal.


Side Note:  Tastes even better chilled the next day.

Great Expectations

Regarding food, my passion has always been in the known.  If I like a certain restaurant plate, I’ll order it every time.  If I've already found enjoyment in a recipe, I’ll serve it to a guest.  I’ve even gone as far as knowing every restaurant I’ll attend while on vacation, and knowing what I’ll order when I get there.  Twenty ten will be different.

Mid-February may be a bit late for a new year’s resolution, but it’s not too late.  After all, what would be the point in setting a pointless goal?  So this year I plan on being adventurous in my kitchen and your table alike.

Being vocally un-fond of tomatoes and having a newly acquired love of mushrooms, sundried tomatoes and portobellos have rarely, if ever, found a spot in my kitchen.  But tonight I was determined to venture recipe free in unchartered vegetable territory.  And I did.  But my spinach, sundried tomato, and goat cheese stuffed portobello creation was like earning a “B” on your report card – it was good, probably acceptable to others, but you know you can do better.
      
I know this dish has potential and will let you know when I’ve come up with “A” material!

Grass Roots


Tampa is what it is, and after returning home from a year in Dallas, I appreciate the "is".  I've never doubted my seemingly lacking city in the food quality department.  And even if you gave me a choice between a Tampa and Dallas restaurant, I'd probably choose Tampa 95% of the time.  Yes, really.  But the other 5%?  My heart aches for Spiral DinerCosmic Cafe, and Bliss Raw Cafe.

The only place here that compares in fashion forwardness is Grass Roots.  And it's not just good because of it's lone soldierism, it ranks nicely in my theoretical Tampa vs. Dallas game.

I ordered "Sabrina's Favorite Sandwich" for lunch - raw onion "bread" with raw hummus, avocado, sprouts, lettuce and sheeze.  It seems as though faux cheese and I have a special relationship these days.  Interesting.  But back to the dish, 100% raw and 150% delicious!  The raw onion bread even sparked an interest in adding a food dehydrator to my extensively unnecessary food appliance collection.

The Trifecta of Diet Awesome

After graduation and the few additional LBs that tag along with a newly acquired desk job, I sampled every diet under the sun. There were many that I hated, few that I tolerated, and barely any that I enjoyed. What I've come to realize is that most diets are created from a logical, nutrition-based concept, but taken to extremes in order for people to LOSE WEIGHT FAST! (think Billy Mays).

The diets that were my favorite, uncoincidentally, were the same diets that made me feel my best. Unfortunately, my favorites fall into the extreme category and were difficult to stick to as they tended to make me feel isolated and anti-social. So what were they?

- South Beach / Low Carb (most of 2007)
- Vegan (September 2008)
- Gluten-Free (August 2009 - December 2009)

I was recently tested for food allergies to confirm my suspicions that an allergy must be the cause of a lifetime of stomach mishaps. If it looks like an egg, it must be an egg, right? Wrong. A panel consisting of well over 30 food allergens and I tested negative for every last one of them. Really?? No answers! And so, my quest for optimal health continues...

I fell off the gluten-free wagon about two weeks ago upon receiving my test results AND as holiday goodies started pouring in my office doors. Evil monkeys!

I'm diet-less once again and scheming my next fitness plot. Each time I re-start the scheming process, I'm convinced, I "know" I will find the perfect way to be. So what's my plan today? The Trifecta of Diet Awesome! The Trifecta will be the result of dissecting the above mentioned favorites, cherry picking them if you will, creating a pro/con list and tossing all the cons. If only boys were this simple!

South Beach Pros: Low Gylcemic Index, High Fiber
South Beach Cons: Use of artificial sweeteners, Lots of Meat, Lots of Dairy

Vegan Pros: Alkaline Diet, Sustainable Lifestyle
Vegan Cons: DIFFICULT TO EAT ANYWHERE!

Gluten-Free Pros: No Gluten = Less Sluggish/Difficult to enter food coma
Gluten-Free Cons: Somewhat difficult to eat out, Limited selection at the supermarket

So it is, my newest mission will be to eat foods low on the glycemic index, high on the fiber list, minimal animal, and very minimal gluten (wheat). If I find myself at a steakhouse swimming in a glorious pool of beef and bread, I won't freak, but I also won't venture often.
